Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Chop the ham into fine bits.

  2. Mix the ham with an equal amount of fine bread crumbs.

  3. Season the mixture with pepper, coarse sea salt, and a little melted butter.

  4. Moisten the mixture with milk and half fill patty tins.

Bake

  1. Break an egg on top of each filled patty tin.

  2. Dust with salt, pepper, and fine cracker crumbs.

  3. Bake at 400°F (200°C) for about eight minutes.

What each ingredient does

Eggs
Set over the patties, forming a firm, cohesive topping as they bake.
Fine bread crumbs
Absorb the milk and butter, giving the mixture body and holding it together.
Milk
Moistens the crumbs and ham, keeping the patties tender as they cook.
Melted butter
Adds fat for richness and a softer, more tender texture.
Fine cracker crumbs
Dusted on top to brown and crisp the surface in the oven.

The step that matters

Breaking the egg on the filled tin. The egg should sit neatly on top without breaking into the filling, so the yolk and white set as a distinct layer and the patty stays moist rather than scrambled.
