Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it its meaty texture.
Pork
Adds fat and moisture so the lean veal stays tender while baking.
Eggs
Bind the meat and crackers together and help the loaf hold its shape when sliced.
Crackers
Absorb juices and fat, keeping the loaf moist and giving it a binding structure.

The step that matters

Bake low and slow, then cool before slicing. A slow oven cooks the egg-bound meat evenly without drying it out. Letting the loaf cool lets the proteins set further, so slices hold together instead of crumbling.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pork, egg, butter, pepper):

  1. Parsleyfits better
  2. Sagefits better
  3. Thymefits about as well
  4. Nutmegthe original

Fit is the average pairing score against veal, pork, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
