Stuffed Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tomatoes

  1. Preheat the oven to 350°F (175°C).

  2. Cut a thin slice off the blossom end of each tomato and remove the pulp with a spoon.

Make the filling

  1. Chop the cold boiled ham and mix it with parsley, pepper, and coarse sea salt, or substitute onions for parsley.

  2. Add an equal amount of bread crumbs to the ham mixture and moisten with some of the tomato pulp.

Stuff and bake

  1. Fill the tomatoes with the mixture and tie the tops on.

  2. Place the stuffed tomatoes in a dish with a little water and a small piece of butter on each tomato.

  3. Bake for 30 minutes.

What each ingredient does

Bread crumbs
Absorb the moisture from the ham and pulp so the filling holds its shape.
Butter
Adds richness and fat that helps the tomato tops brown and the filling taste fuller.
Cold boiled ham
Provides the savoury, meaty flavour that the filling is built around.
Large tomatoes
Act as the edible shell, releasing juice that gently steams the filling as it bakes.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (tomato, ham, parsley, pepper, bread, butter):
