What each ingredient does

Clams
Form the main body of the filling and provide the seafood flavour.
Bread crumbs
Absorb moisture and bind the filling, then brown into a crisp topping.
Butter
Adds richness and fat that melts into the filling and browns the top.
Tomatoes
Add moisture and gentle acidity that brightens the filling.
Clam juice
Moistens the mixture and reinforces the clam flavour.

The step that matters

Add clam juice until the mixture is the consistency of sausage. Too little liquid leaves the filling dry and crumbly, while too much makes it soggy and slow to set. Bread crumbs absorb the juice, so the mixture should hold together when pressed without being wet.
