The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dressing

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine bread crumbs, butter, and enough water to moisten.

  3. Add oysters, pepper, and salt; mix well.

Stuff and roast

  1. Stuff the turkey with the dressing.

  2. Place the turkey in a roasting pan and cover the outside with butter.

  3. Add some water to the roasting pan.

  4. Bake in the oven, basting often, until fully cooked.

What each ingredient does

Turkey
Forms the main body of the dish and is cooked through by roasting.
Bread crumbs
Absorb moisture and butter to form the body of the stuffing.
Butter
Adds fat and richness, and helps the outside of the turkey brown.
Oysters
Add a briny, savoury flavour to the stuffing.

The step that matters

Bake in the oven, basting often, until fully cooked. A stuffed turkey takes longer to cook through, and the stuffing must reach a safe internal temperature. Basting keeps the surface moist while the interior heats.
