Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut up the chicken.

  2. Boil the chicken for 45 minutes.

  3. Make the dough by mixing flour, butter, salt, and enough water to form a dough.

  4. Cover the bottom of a pie dish with a layer of dough.

Assemble and bake

  1. Partially bake the crust at 350°F (175°C).

  2. Pour in the chicken and the cooking water.

  3. Season with salt and pepper.

  4. Invert a teacup in the middle of the pie.

  5. Place the upper crust on top.

  6. Make incisions in the upper crust for steam to escape.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main filling; its cooking water adds moisture to the pie.
All-purpose flour
Forms the gluten network that gives the crust its structure.
Butter
Adds fat that tenderises the crust and makes it short and flaky.

The step that matters

Partially bake the crust before adding the filling. Unbaked dough under a wet filling stays pale and soggy. Pre-baking sets the base so it holds up once the chicken and cooking water go in.
