What each ingredient does

Eggs
Thicken the dressing as they cook, giving it a creamy, mush-like body.
Butter
Adds richness and fat, softening the sharpness of the vinegar and mustard.
Mixed mustard
Adds sharp, pungent flavour that balances the sweetness and richness of the dressing.
Vinegar
Adds acidity that brightens the dressing and sharpens the overall flavour.
Sugar
Adds sweetness that rounds out the acidity of the vinegar and mustard.
Cooked chicken
Forms the main body of the salad, providing protein and bulk.

The step that matters

Cooking the dressing while stirring constantly. Egg proteins set as they heat, so the mixture thickens into a smooth dressing. If left unstirred or overheated, the eggs can scramble and curdle, leaving lumps instead of a uniform, creamy texture.

Swap the celery

How well each one fits the dish's main ingredients (chicken, egg, butter, vinegar, mustard, sugar, pepper):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, egg, butter, vinegar, mustard, sugar, pepper. Candidates are from the same food group and used in at least 100 recipes.
