What each ingredient does

Egg yolks
Thicken the sauce as they cook and give it a rich, creamy body.
Vinegar
Adds acidity that sharpens the flavour and balances the richness of the sauce.
Sweet cream
Adds fat and moisture, making the dressing smooth and mellow.
Butter
Adds fat and richness, helping the sauce feel smooth.
Mustard
Adds sharp, pungent flavour that complements the ham.

The step that matters

Boil the mixture until it creams. Egg yolks scramble if overheated, so the sauce must be heated gently and stirred until it thickens smoothly; overcooking curdles it into grainy lumps.

Swap the lettuce

How well each one fits the dish's main ingredients (ham, butter, pepper, sugar, mustard, vinegar, egg):

  1. Capsicumfits better
  2. Shallotfits better
  3. Horseradishfits about as well

Fit is the average pairing score against ham, butter, pepper, sugar, mustard, vinegar, egg. Candidates are from the same food group and used in at least 100 recipes.
