Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the main body, turning soft and tender when fried.
Beaten egg
Binds the crumb coating so it sticks to the slices while frying.
Bread crumbs or grated crackers
Forms a crisp golden crust that browns during frying.
Lard
Conducts heat for frying and encourages browning of the coating.

The step that matters

Wipe each slice dry before coating. Surface moisture keeps the egg and crumbs from adhering and can make the coating steam instead of crisp in hot fat.
