Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Stew dried apples in minimal water until soft.

  2. Sweeten to taste and add orange peel or lemon slice.

  3. Flavor with a pinch of spice.

  4. Pass the mixture through a coarse sieve, sweeten and season again.

Assemble and bake

  1. Stir in the beaten egg.

  2. Fill pie pans with the mixture and cover with thin rolled crusts.

  3. Bake at 350°F (175°C) until golden and warm before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dried apples
Softened in water, they form the body and main fruit flavor of the filling.
Sugar
Sweetens the filling and balances the apples' tartness.
Beaten egg
Helps bind the filling and set it as it bakes.
Pie crusts
Enclose the filling and brown in the oven.

The step that matters

Stir in the beaten egg. If the filling is still very hot, the egg can scramble, leaving streaks instead of a smooth, binding mixture. Let the filling cool slightly before stirring the egg in evenly.

Swap the orange

How well each one fits the dish's main ingredients (apple, sugar, egg):

  1. Vanillafits better
  2. Pearfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against apple, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
