Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca farina
Thickens the milk as it cooks, giving the pudding its body and soft, spoonable texture.
Eggs
Enrich the pudding and help set it as it cools, adding richness and structure.
Egg whites
Whipped and folded into the sauce, they add lightness and airy volume.
Butter
Adds fat, contributing richness and a smoother mouthfeel to the pudding.
Sugar
Provides sweetness and balances the flavor of the milk and eggs.

The step that matters

Boil the mixture in a double boiler. Gentle, indirect heat lets the tapioca swell and thicken evenly without scorching the milk or curdling the eggs. Direct high heat can burn the bottom and cause lumps.
