Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the ice and lowers its freezing point, keeping it softer and smoother.
Lemon juice
Provides the sharp acidity that defines the lemon flavor.
Lemon rind
Adds aromatic oils that give fragrance and a deeper citrus flavor.
Egg whites
Whipped into foam, they add air and a lighter, fluffier texture.

The step that matters

Gently stir in the well-beaten egg whites. Egg white foam traps air for a light texture. Stirring too hard deflates it, leaving the ice dense and heavy.

Swap the lemon
