Jelly
Ingredients
Directions
Select fruit before it is too ripe for better flavor.
Heat the fruit to extract juice, then strain through a flannel bag.
Strain the juice twice, allowing it to drip overnight for clarity.
Heat sugar in the oven before adding it to the juice.
Boil the mixture rapidly in a large pan for 15-20 minutes after it starts boiling.
If desired, add a little gelatine to keep the color light.
Pour into glasses and set in the sun to cool.
Cover with writing paper dipped in alcohol and secure with a rubber band.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
