What each ingredient does

White sugar
Forms the candy's sweet structure as it cooks into a syrup and then sets.
Cream of tartar
Acidity helps prevent sugar crystals from forming, keeping the candy smooth and creamy.

The step that matters

Boil without stirring. Stirring hot sugar syrup can trigger premature crystallization, leaving a grainy texture instead of a smooth candy. Letting it boil undisturbed keeps the sugar dissolved and lets the syrup reach the target concentration.
