  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix together the ground veal, chopped onion, beaten eggs, rolled crackers, butter, coarse sea salt, milk, black pepper, and red pepper.

  3. Shape the mixture into a loaf and place it in a greased pan.

Top and bake

  1. Grease the top with hot lard and sprinkle with flour.

  2. Pour the tomatoes over the loaf.

  3. Bake in the preheated oven until cooked through.

Serve

  1. Serve hot or cold with sliced green peppers.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground veal
Forms the main body of the loaf and provides the meaty texture.
Eggs
Bind the mixture and help the loaf hold its shape as it sets.
Rolled crackers
Absorb liquid and add body, keeping the loaf tender rather than dense.
Milk
Adds moisture, keeping the loaf from drying out while it bakes.
Onion
Adds savory aroma and flavor to the meat mixture.
Tomatoes
Add acidity and moisture to the surface as the loaf bakes.

The step that matters

Bake until cooked through. Ground veal must reach a safe internal temperature throughout, because mixing and shaping spread any surface bacteria into the center. Bake until the middle is fully cooked, not just the surface browned.

Swap the onion
