Directions

Make the base

  1. In a saucepan, combine 2 cups of granulated sugar and ½ cup of water. Boil until it forms a syrup.

  2. In a bowl, mix the syrup with 1 quart of thin cream and 1 quart of strawberries. Strain the mixture.

Freeze and fill

  1. Freeze the mixture in a fancy circular mold with a tight cover for 2 hours.

  2. Remove the ice cream from the mold and fill the center with carefully washed and drained unhulled strawberries.

What each ingredient does

Strawberries
Provide the main flavor and, once strained, the fruity body of the ice cream.
Thin cream
Supplies fat that makes the ice cream rich and smooth in texture.
Granulated sugar
Sweetens the base and lowers the freezing point so the ice cream stays soft.

The step that matters

Freeze the mixture in a tight-covered mold. Sugar and fat keep the base from freezing rock-hard, but a long or uneven freeze lets large ice crystals form, which makes the texture grainy. A tight cover keeps out air and odors that cause freezer burn.
