Chicken Croquettes

Ingredients

Directions

  1. In a bowl, combine the chopped chicken, salt, pepper, nutmeg, onion juice, and parsley.

  2. In a double boiler, heat the milk and chicken stock.

  3. In a separate bowl, rub the butter and flour together to form a paste.

  4. Pour enough hot liquid over the paste to dissolve it, then add it to the milk in the boiler.

  5. Stir and cook until the sauce thickens, then season with salt and cayenne pepper.

  6. Add the chicken mixture to the sauce and stir well.

  7. If desired, fold in the chopped mushrooms for added flavor.
