Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat jelly (pig skin, head, hoof, nails, tail)
Its collagen dissolves into the water and sets into a firm jelly as it cools.
Garlic
Adds aromatic pungency that mellows and flavors the broth during long simmering.
Black pepper seeds
Contributes a sharp, aromatic heat that perfumes the broth.

The step that matters

Cook until the meat is completely soft. Collagen in skin, hoof and tail only converts to gelatin after prolonged simmering. If the meat is undercooked, the liquid will not gel properly once cooled.

Swap the clove

How well each one fits the dish's main ingredients (onion, garlic, pepper, meat):

  1. Thymefits better
  2. Cuminfits better
  3. Parsleyfits better
  4. Clovethe original

Fit is the average pairing score against onion, garlic, pepper, meat. Candidates are from the same food group and used in at least 100 recipes.
