Country Stuffed Cabbage

Ingredients

Directions

Make the sauerkraut base

  1. Heat lard in a pot and sauté chopped onions until brown.

  2. Add paprika and sauerkraut, then dilute with cold water or ham cooking liquid.

  3. Add a large onion cut in half and garlic cloves, then cook slowly for 30 minutes.

Make the stuffing

  1. Grind pork leg, beef, and smoked meat for the stuffing, then mix with rice, paprika, minced garlic, salt, pepper, and eggs.

  2. Form half of the mixture into meatballs and use the other half to stuff cabbage leaves.

Cook the cabbage

  1. Place stuffed cabbage balls into boiling water, making room with a spoon.

  2. If the cabbage is too thick, dilute with water, cover, and cook slowly.

  3. Let it cook slowly; the longer it cooks, the better the flavor.

What each ingredient does

Sauerkraut
Provides the sour, tangy flavor that defines the dish and helps keep the filling moist.
Pork leg
Adds fat and rich flavor to the stuffing, keeping the meat moist as it cooks.
Beef
Adds savory meaty flavor and body to the stuffing.
Rice
Absorbs juices in the stuffing, helping it hold together and stay tender.
Eggs
Bind the ground meat and rice so the stuffing holds its shape.
Onions
Browning in the lard builds sweetness and savory depth in the base.

The step that matters

Slow cooking of the cabbage. Cooking slowly over gentle heat lets the stuffing cook through and the sauerkraut and cabbage soften and blend, while a rapid boil can toughen the meat and break up the rolls.

Swap the clove

How well each one fits the dish's main ingredients (pork, onion, beef, egg, rice, cabbage, meat):

  1. Garlicfits better
  2. Turmericfits better
  3. Celeryfits better
  4. Clovethe original

Fit is the average pairing score against pork, onion, beef, egg, rice, cabbage, meat. Candidates are from the same food group and used in at least 100 recipes.
