Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C) and butter the gem pans until they are hissing hot.

Make the batter

  1. In a bowl, mix the Graham flour, sugar, salt, water, and milk.

  2. Add the beaten egg yolks and mix well.

  3. Fold in the beaten egg whites gently.

  4. Pour the batter into the hot gem pans.

Bake

  1. Bake for 20 to 30 minutes until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the batter, and beaten whites folded in add lightness and help the gems rise.
Graham flour
Forms the structure of the gems and gives them a nutty, wholesome texture.
Milk
Adds moisture and richness, and its milk sugars help the surface brown in the oven.
Sugar
Adds sweetness and helps the crust brown during baking.

The step that matters

Folding in the beaten egg whites. Whites hold air that lifts the batter. Stirring vigorously knocks that air out, so fold gently until just combined to keep the gems light.
