What each ingredient does

Meat and bone
Provides the main body and savory flavor as the liquid simmers.
Parsley
Adds green color and a fresh herbal aroma to the finished soup.
Celery
Adds green color and a mild vegetable aroma to the soup.
Grated carrot
Adds orange color to the soup.
Burnt sugar
Adds deeper brown color and a slightly bitter caramel note.
Spinach
Adds green color to the soup.

The step that matters

Bringing to a boil. If the liquid evaporates too far, the meat and bone are no longer covered and the soup becomes concentrated and weak. Replacing lost liquid with boiling water keeps the simmer steady and the flavor balanced.
