What each ingredient does

Knuckle of veal
Gives the broth its body and savory meaty flavor during the long simmer.
Carrots
Provide sweetness and color, and soften into the soup to give it body.
Celery
Adds aromatic, savory flavor to the broth as it simmers.
Rice
Thickens the soup slightly as its starch releases during boiling.
