Braised Turkey

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Truss and stuff the turkey with the forcemeat made of minced chicken, mushrooms, sweetbreads, and bread crumbs.

  2. Lard the breast with fine shreds of fat salt pork.

Braise

  1. Place the turkey in a stewpan, breast side up, with sliced vegetables and enough broth to cover.

  2. Set the stewpan on the stove and bring to a simmer.

  3. Once simmering, transfer to a 300°F (150°C) oven and cook slowly for 1.5 hours.

  4. Baste occasionally with the gravy.

Finish and serve

  1. Garnish the turkey with stoned olives and thicken the gravy before serving.

What each ingredient does

Turkey
Forms the main body of the dish, cooking slowly so the meat becomes tender in liquid.
Minced chicken
Forms the forcemeat stuffing, adding body and a binding texture inside the bird.
Bread crumbs
Absorb juices and help bind the forcemeat so it holds together while cooking.
Fat salt pork
Adds fat and richness, moistening the lean breast meat as it renders during cooking.
Broth
Provides moist, slow-cooking liquid that tenderizes the turkey and forms the base of the gravy.

The step that matters

Cook slowly at 300°F (150°C) with the stewpan covered in liquid. Low, gentle heat keeps the braising liquid below a hard boil, so muscle fibres relax and turn tender rather than tough and dry.

Swap the carrot

How well each one fits the dish's main ingredients (turkey, chicken, mushroom, bread, pork, onion, olive):

  1. Tomatofits better
  2. Capsicumfits better
  3. Potatofits better
  4. Carrotthe original

Fit is the average pairing score against turkey, chicken, mushroom, bread, pork, onion, olive. Candidates are from the same food group and used in at least 100 recipes.
