Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Becomes tender and flavorful through slow simmering, with connective tissue breaking down into moist meat.
Drippings
Fat for searing the beef, building a browned surface and roasted flavor.
Onion
Browning in butter adds sweetness and aroma that carries into the gravy.
Butter
Fat that helps the onion brown, adding richness and savory aroma.

The step that matters

Searing the beef. Browning the meat's surface creates flavorful Maillard compounds. Pale searing gives a flat-tasting gravy, so the surface should be well colored before adding liquid.

Swap the onion

How well each one fits the dish's main ingredients (beef, butter, pepper):

  1. Potatofits about as well
  2. Onionthe original
