Why it works: Beef and mushroom are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 3,232 recipes. Both carry 2,4-nonadienal, which smells fatty, green. The science ↓

Directions
Cook the kidney
Cut the beef kidney into very thin slices.
Flour the slices and fry them until light brown.
Remove the kidney from the pan and pour off the fat.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Beef kidney
- Forms the main body of the dish, cut thin so it cooks quickly and stays tender.
- Flour
- Coats the slices so they brown in the pan and help thicken the gravy.
- Butter
- Adds fat and richness to the pan gravy.
- Mushroom catsup
- Adds deep savoury, umami flavour to the gravy.
The step that matters
Frying the floured slices until light brown. Frying over sufficient heat browns the flour and surface through the Maillard reaction, building flavour. Overcooking toughens thin kidney slices, so they should be removed once browned.
