Breaded Mutton

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Sew the mutton in a thin cloth and place it in a saucepan.

  2. Cover the mutton with cold water and stew gently for 10 minutes per pound.

Bake

  1. Remove the mutton from the saucepan, unwrap it, and place it in a baking dish.

  2. Brush the mutton with warm dripping and dredge it with flour.

  3. Bake the mutton in a 400°F (200°C) oven for 30 minutes, basting with broth.

  4. A few minutes before serving, sprinkle the mutton with bread crumbs and dot with butter to brown.

  5. Serve the mutton garnished with slices of beetroot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the main meat, which becomes tender through gentle stewing before baking.
Warm dripping
Adds fat that carries heat to the surface and helps the coating brown.
Flour
Forms a dry layer on the meat that helps the crust brown and hold on.
Fine dry bread crumbs
Form a crisp, golden crust on the outside of the meat.
Butter
Adds fat and richness, helping the crumb crust brown and taste rich.

The step that matters

Sprinkling the bread crumbs and dotting with butter near the end. Adding the crumbs too early can burn or soften them before the meat is done, so they are added only a few minutes before serving to brown lightly.
