Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites to a stiff froth.

  3. Sift the flour and sugar separately ten times.

  4. Gradually add the sugar and flour to the egg whites, a little at a time.

  5. Pour the batter into an ungreased pan.

Bake

  1. Bake for 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the cake its light, airy structure.
Granulated sugar
Sweetens the cake and helps stabilise the whipped egg white foam.
All-purpose flour
Provides the light structure that holds the cake's airy crumb as it sets.
Cream of tartar
Acidifies the egg whites, helping them whip to a more stable foam.

The step that matters

Gradually add the sugar and flour to the egg whites. Folding the dry ingredients in slowly keeps the whipped foam from collapsing. Deflating the foam makes the cake dense instead of light and airy.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, sugar, flour, cream):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against egg, sugar, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
