Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whipped into a light foam that gives the dessert its airy, creamy body.
Gelatin
Sets the dissolved liquid so the whipped cream holds its shape when chilled.
Powdered sugar
Sweetens the cream and dissolves easily into it without graininess.
Blanched almonds
Add a crunchy, nutty texture against the soft, creamy mixture.

The step that matters

Strain in the dissolved gelatin and mix thoroughly but lightly. Gelatin must be fully dissolved and evenly distributed, or it sets in lumps. Mixing gently keeps the air from the whipped cream, so the dessert stays light rather than deflating.

Swap the almond

How well each one fits the dish's main ingredients (cream, gelatin, sugar, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Pistachiofits less well
  4. Hazelnutfits less well

Fit is the average pairing score against cream, gelatin, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
