Orange Vol-au-vent

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pastry

  1. Roll out the puff pastry into a thin sheet.

  2. Cut out an oval piece and three rims to fit.

Bake and assemble

  1. Bake until golden, then spread the edges lightly with orange preserve or meringue.

  2. Stack the rims on top of the oval piece.

  3. Decorate with meringue and return to a 350°F (175°C) oven for about five minutes.

  4. Fill the center with well-sugared fresh sliced oranges.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: beta-damascenone (apple, rose).

Orange and sugar barely smell alike, yet cooks put them together in 19,212 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich puff paste
Bakes into flaky, layered walls that hold the vol-au-vent's shape.
Orange preserve or meringue
Acts as a sticky glue that holds the rims in place on the base.
Fresh sliced oranges
Provide juicy, bright fruit flavour and moisture for the filling.
Sugar
Sweetens the oranges and draws out some of their juice.

The step that matters

Bake until golden before assembling. Puff pastry rises and sets in the oven, so it must be fully baked before the rims are stacked. Under-baked pastry stays soft and collapses, and the rims slide out of shape when the piece is reheated for the meringue.
