Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Make the nougat
In a copper bowl, mix powdered sugar and egg whites, whipping over a clear fire until thick like batter.
Add chopped almonds, candied orange peel, vanilla sugar, and strawberry juice. Mix well.
Bake and shape
Spread the mixture on two pieces of wafer paper, about 1 inch thick.
Cover with two more pieces of wafer paper and place a flat tin with a small weight on top to keep level.
Bake in a 350°F (175°C) oven for a few minutes until nearly dry.
Cut into oblong squares or shape into baskets while still warm.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Powdered sugar
- Dissolves into the egg whites and gives the nougat its sweetness and body.
- Egg whites
- Whipped to a foam that gives the nougat its light, airy structure.
- Blanched almonds
- Add crunch and bulk, giving the nougat its chewy-crisp texture.
- Candied orange peel
- Adds chewy pieces of sweet, bitter citrus flavour.
The step that matters
Whipping the egg whites and sugar until thick. Egg whites need to be whipped until they hold a thick, stable foam; under-whipped whites leave the nougat dense and runny. The base must be thick before the nuts are added so the mixture keeps its structure while baking.
Swap the orange
How well each one fits the dish's main ingredients (sugar, egg, almond, vanilla, strawberry):
- Blueberryfits better
- Figfits better
- Peachfits better
- Orangethe original
Fit is the average pairing score against sugar, egg, almond, vanilla, strawberry. Candidates are from the same food group and used in at least 100 recipes.
