What each ingredient does

Cucumbers
Provide the main crisp vegetable body of the pickle.
Brown sugar
Adds sweetness that balances the sharp vinegar and salt.
Vinegar
Acidity that preserves the vegetables and gives the pickle its sharp flavor.
Ground mustard
Adds pungent flavor and thickens the pickling liquid once cooked.
Coarse sea salt
Draws water out of the vegetables so they stay firmer and absorb less liquid.
Cauliflowers
Adds bulk and firm texture that holds up to the hot pickling liquid.

The step that matters

Drain the mixture thoroughly. Salting draws water out of the vegetables; any water left in the pot dilutes the vinegar and reduces its preserving strength and makes the pickle watery.
