What each ingredient does

Sour apples
Adds tartness that brightens the pickling liquid and balances the savory seasonings.
Soy sauce
Contributes salty, savory depth and umami to the pickling liquid.
Vinegar
Acts as the main pickling liquid, acidifying the vegetables and helping preserve them.
Coarse sea salt
Draws moisture from the vegetables and seasons them throughout.
