Ingredients

Directions

The book says “a slow oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the macaroni

  1. Break the macaroni into small pieces.

  2. Place the macaroni in a saucepan with boiling salted water and cook until tender.

  3. Drain the macaroni.

Season and bake

  1. Transfer the drained macaroni to a stew-pan and add black pepper, salt and butter.

  2. Mix in grated cheese.

  3. Pour the mixture into a baking dish and sprinkle with more cheese.

  4. Bake at 400°F (200°C) for 30 minutes.

What each ingredient does

Macaroni
Forms the bulk and structure of the dish once cooked and baked.
Butter
Adds fat and richness, coating the pasta and carrying flavour.
Grated cheese
Melts into the pasta for creaminess and savoury flavour, and browns on top.
