Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Powdered gelatin
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Adds sweetness and balances the sharpness of the vinegar.
Sharp vinegar
Provides acidity that gives the jelly a tangy, sharp flavor.

The step that matters

Dissolving the gelatin. Gelatin must be fully dissolved into the hot liquid before setting. Undissolved granules leave gritty or weak spots, and the jelly will not set evenly. Keep the mixture hot enough to dissolve it, but stir gently and avoid a hard boil after adding it.

Swap the white pepper

How well each one fits the dish's main ingredients (gelatin, vinegar, sugar, mint):

  1. Cinnamonfits better
  2. Tarragonfits better
  3. Peppermintfits better
  4. White pepperthe original

Fit is the average pairing score against gelatin, vinegar, sugar, mint. Candidates are from the same food group and used in at least 100 recipes.
