Breaded Chops
Ingredients
Directions
The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.
Have your butcher cut the chops about 1 inch thick.
Beat the egg in a bowl.
Remove any fat or bone from the chops.
Dip each chop into the egg, then coat with bread crumbs.
Dry the breaded chops slowly in the oven at 300°F (150°C).
Heat fat in a frying pan until it gives off blue smoke.
Brown the chops quickly on one side, then on the other.
Cover the pan and move it to the back of the stove to cook slowly.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
