Why it works: Mango and celery share more aroma than cooks usually use. They rank in the top 12% of all ingredient pairs, and 54 recipes mention both. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Jellied Chicken

Ingredients

Directions

Prepare the broth

  1. Prepare the chicken as for pressed chicken, leaving 2 cups of broth.

  2. Cool the broth and remove the fat.

  3. Soak the gelatin in ¼ cup of cold water for 15 minutes.

  4. Heat the broth until dissolved, then add the soaked gelatin.

Set and serve

  1. Mix in the minced chicken, chopped nuts, chopped pimento or mango, chopped celery, and cayenne.

  2. Pour the mixture into a granite or aluminum pan to a thickness of 1 inch.

  3. Set the pan on ice until the mixture is firm enough to cut into squares.

  4. Serve on a lettuce leaf or garnish with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the broth into a firm, sliceable jelly as it cools.
Chicken broth
Forms the liquid base that the gelatin sets into a jelly.
Minced chicken
Provides the meaty body and protein of the jellied mixture.
Celery
Adds crisp texture and a mild, fresh vegetal note.
Nuts
Add crunch and a rich, toasty contrast to the soft jelly.

The step that matters

Heating the broth just until the gelatin dissolves. Gelatin must fully dissolve for the jelly to set evenly; overheating the broth can weaken its setting power, while undissolved granules leave gritty, uneven patches. Chilling on ice then firms the mixture so it can be cut cleanly.

Flavor stand-ins for the nuts

How well each one fits the dish's main ingredients (chicken, gelatin, mango, celery):

  1. Beansbetter flavor fit
  2. Cashew nutbetter flavor fit
  3. Walnutbetter flavor fit
  4. Nutsthe original

Fit is the average pairing score against chicken, gelatin, mango, celery. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
