Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomato pulp
Provides the main body, flavour and colour of the jelly.
Gelatin
Sets the liquid into a firm jelly as it cools.
Vinegar
Adds acidity that brightens the tomato flavour.
Sugar
Balances the acidity and tartness of the tomato and vinegar.

The step that matters

Stirring in the soaked gelatin until dissolved. Gelatin must fully dissolve in the hot mixture before cooling; undissolved granules leave gritty spots and weak, uneven setting in the finished jelly.

Flavor stand-ins for the celery

How well each one fits the dish's main ingredients (tomato, sugar, mustard, vinegar, gelatin):

  1. Tarragonbetter flavor fit
  2. Capersabout as good a flavor fit
  3. Cinnamonabout as good a flavor fit
  4. Celerythe original

Fit is the average pairing score against tomato, sugar, mustard, vinegar, gelatin. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
