What each ingredient does

Corn meal
Forms the thickened body of the gruel as its starch swells and gelatinizes in boiling water.

The step that matters

Adding the corn meal mixture in spoonfuls. Adding the wet corn meal gradually while stirring keeps the starch dispersed. Dumping it in at once would clump into lumps that cannot be smoothed out.
