Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Salmon Timbales

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the red salmon, bread crumbs, beaten eggs, Worcestershire sauce, lemon juice, salt, and pepper. Mix well until all ingredients are combined.

  3. Spoon the mixture into greased timbale molds or ramekins.

Bake and serve

  1. Bake in the preheated oven for 25-30 minutes until set and lightly browned.

  2. Serve with thick white sauce drizzled on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red salmon
Provides the main body and flavor of the timbales.
Eggs
Bind the mixture and set when baked, giving the timbales their firm structure.
Bread crumbs
Absorb moisture and soften the mixture, giving a tender rather than dense texture.
Thick white sauce
Adds moisture and richness to the finished timbales.

The step that matters

Bake until set. Eggs set as their proteins coagulate with heat. Underbaking leaves the timbales loose and wet in the middle, while overbaking makes them dry and rubbery.
