What each ingredient does

Pickles
Provide the main body of the dish, which is preserved by soaking and vinegar.
Pure cider vinegar
Acts as the preserving liquid that gives the pickles their sour, tangy flavor.
Salt water
Soaking in brine draws out moisture and firms the pickles before packing.
White mustard seeds
Add a sharp, pungent flavor layered between the pickles.

The step that matters

Pour the boiling hot vinegar over the pickles. The vinegar must be boiled and skimmed so it is hot and clean; hot liquid helps the pickles absorb flavor and reduces the chance of spoilage from surviving microbes.

Swap the grape

How well each one fits the dish's main ingredients (vinegar, mustard):

  1. Avocadofits better
  2. Limefits better
  3. Cherryfits better
  4. Grapethe original

Fit is the average pairing score against vinegar, mustard. Candidates are from the same food group and used in at least 100 recipes.
