Salami Veal

  1. Remove the chine bone and tendons from the veal breast.

  2. Flatten the veal and spread the forcemeat over it.

  3. Layer with green peppers, red bell peppers, ham or bacon, hard boiled egg yolks, and truffles.

  4. If available, add boiled calves' feet and pieces of fowl.

  5. Sprinkle with pepper and salt, then roll tightly and wrap in cloth.

  6. Tie securely and stew for 3 hours or more.

  7. Remove from the pot, press flat, and let cool completely before unwrapping.
