Why it works: Tomato and rice match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 3,065 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Baked Stuffed Tomatoes

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Cut off the stem end of each tomato and scoop out enough of the inside to create a hole for filling.

  3. Mix the stewed rice, chopped parsley, and grated onion together.

Fill and bake

  1. Fill each tomato with the rice mixture.

  2. Top each filled tomato with a little butter and sprinkle with coarse sea salt.

  3. Bake in the preheated oven for about 30 minutes.
