Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Kidneys
Provide the main meaty filling that cooks into the topping.
Fat from kidneys
Adds richness and moisture, and fries the bread to a golden, absorbent crust.
Bread
Forms the base that soaks up melted fat and crisps in the oven.

The step that matters

Frying the bread in the melted fat until golden and absorbent. Bread that is undercooked stays pale and soggy, while properly fried bread absorbs the fat and forms a sturdy base that holds the kidney topping.
