Pish Toasts

Ingredients

Directions

  1. Remove oil, skin, and bones from the fish, then chop it on a plate and knead with a little fresh butter.

  2. Mix a small quantity of white sauce with the minced fish and add the egg yolk.

  3. Heat the mixture until thick and hot, then spread it on slices of hot fried toast.

  4. For prawns, boil in salted water, then pick and pound the shells.

  5. Melt 1 tablespoon of butter in a small saucepan over low heat, add the prawns, and stir gently for a few minutes.

  6. Place the prawns on hot fried toasts and pour over the butter from the pounded shells.

  7. Dust with Nepal pepper and a little mace, then serve immediately.
