Good Plain Gravy Soup

Ingredients

Directions

Prepare the broth

  1. Have the butcher break the bones of the beef.

  2. Place the beef in a stewpan and cover with cold water.

  3. Bring to a gentle boil, skimming off any scum that rises.

  4. Add salt, peppercorns, sweet herbs, fried onions, shallots, and cloves.

  5. Let it simmer gently for 4 hours.

  6. Remove the meat and keep it warm or set aside for later.

  7. Strain the soup and let it stand overnight.

Finish and serve

  1. When ready to serve, remove the fat and heat the soup gently for 1 hour.

  2. If desired, add carrot, turnip, and celery cut into pieces, or add a tablespoon of mushroom ketchup or soy for flavor.

  3. Serve with toasted bread cut into squares.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shin of beef
Breaks down during long simmering to release gelatin and flavour into the broth.
Coarse sea salt
Seasons the broth throughout and draws out flavour from the meat and vegetables.
Onions
Fried brown first, they add deep colour and a sweet, caramelised savour to the broth.

The step that matters

Skimming the scum as it rises. Proteins and impurities coagulate on the surface as the liquid heats. Removing them early keeps the broth clear and prevents a murky, off-tasting result.

Swap the clove

How well each one fits the dish's main ingredients (beef, onion, shallot):

  1. Capersfits better
  2. Garlicfits better
  3. Tarragonfits better
  4. Clovethe original

Fit is the average pairing score against beef, onion, shallot. Candidates are from the same food group and used in at least 100 recipes.
