Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the mixture

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine the cream, grated cheese, and egg yolks; beat until well mixed.

  3. Whisk the egg whites until frothy and gently fold them into the mixture.

Bake and serve

  1. Half fill small buttered paper trays with the mixture.

  2. Bake for 15 minutes until risen and hot.

  3. Serve immediately in a silver dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and thicken the mixture, while whipped whites add lift and a light, airy structure.
Cheese
Provides the main flavour and, once melted and set, the body of the fondue.
Cream
Adds richness and moisture, keeping the mixture soft and smooth as it bakes.

The step that matters

Folding in the egg whites. Whites should be frothy but not stiff, and folded gently so the air stays trapped. Overmixing deflates the foam, leaving a denser fondue that rises less in the oven.
