Ingredients

Directions

Make the syrup

  1. Combine water, loaf sugar, beaten egg white, and peach kernel in an enamelled pan.

  2. Heat over the fire until the mixture reduces to a syrup, removing any scum.

  3. Take off the heat and let the mixture cool.

  4. Remove the peach kernel.

Finish and freeze

  1. Add the peach juice to the syrup and mix well.

  2. Freeze the mixture as usual.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Dissolves into the water to form a syrup that sweetens the ice and keeps it soft.
Egg white
Its proteins gather scum when heated, which is skimmed off, leaving a clearer syrup.
Peach juice
Supplies the main peach flavour and liquid that freezes into the ice.

The step that matters

Heating the syrup. Heat must be steady enough to reduce the mixture without scorching the sugar. Skimming off the scum that rises as the egg white coagulates keeps the syrup clear and clean-tasting.

Swap the peach

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Peachthe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
