Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter in a bowl.

  2. Beat the egg whites until creamy and add to the butter.

  3. Mix in the finely sifted sugar.

  4. Add the beaten egg yolks and mix well.

  5. Gradually incorporate the ground rice until fully combined.

Bake

  1. Drop spoonfuls of the mixture onto a baking tin.

  2. Sift sugar over the cakes and bake for 20 minutes at 350°F (175°C).

What each ingredient does

Butter
Adds richness and tenderness, and helps carry the batter's flavour.
Egg whites
Whipped air lightens the batter and helps the cakes rise and hold their shape.
Sugar
Sweetens the cakes and helps them brown lightly in the oven.
Egg yolks
Add richness and bind the batter together.
Ground rice
Provides the main body and structure of the cakes as it sets in the oven.

The step that matters

Gradually incorporate the ground rice until fully combined.. Adding the ground rice slowly lets it blend evenly into the batter, preventing lumps and dry pockets and keeping the texture uniform.
