Why it works: Quince and syrup work together. They rank in the top 22% of all ingredient pairs, and cooks put them together in 80 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Quince Jelly
Ingredients
Directions
Prepare the fruit
Peel, quarter, and core the quinces.
Place the quinces in a pot with ½ cup of water and boil until tender but not pulpy.
Pour out the mixture and let the fruit sit in the juice for six hours.
Make the jelly
Strain the juice through a jelly bag.
Heat the juice in a preserving pan for 20 minutes to evaporate some water.
Add 1 pint of clarified syrup to each pint of juice, stir well, and simmer for 10 minutes.
Pour the jelly into jars.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

What each ingredient does
- Quinces
- Provide the pectin and tart flavour that give the jelly its body and character.
- Clarified syrup
- Adds sweetness and helps the jelly set into a firm, glossy gel.
The step that matters
Simmering with the syrup. Quince juice needs enough sugar and a rolling boil to reach the gel point; too short a simmer leaves the jelly runny, while overcooking can make it stiff or cloudy.
