Stocks and Soups

Ingredients

Directions

  1. Put the ham or bacon in a pan with finely shredded celery and onion, tomato ketchup, herbs, and seasoning. Cook slowly, covered, for 20 minutes.

  2. Add the stock, bring to a boil, and skim well. Remove the ham, add the okra, and cook slowly for 30 minutes, skimming often.

  3. Mix cornflour with cold stock to a paste, then stir it into the soup along with more salt and pepper to taste. Boil briefly.

  4. Add finely minced beef or mutton, cover, and heat through for 10 minutes without boiling again.

  5. For a richer soup, use stock No. 7 and add 2-3 egg yolks and ½ cup of cream just before serving.
